Cucumber-Apple Slaw:

Instructions

  1. Make the slaw: In a small bowl, combine cucumber, apple, red onion, mint, and rice vinegar. Toss and set aside to lightly marinate.
  2. Make the yogurt: In another small bowl, mix yogurt, mint, lime juice, and coriander (if using). Chill until serving.
  3. Cook the turkey: Heat olive oil in a large skillet over medium heat. Add onion and carrot; sauté 3–4 minutes until softened. Stir in garlic and ginger; cook 30 seconds until fragrant.
  4. Add the turkey and black pepper; cook 5–6 minutes, breaking it up with a spoon until no longer pink.
  5. Finish with rice vinegar, 1/2 tbsp lime juice, and sesame oil (if using). Stir 30–60 seconds to combine and reduce slightly. Remove from heat.
  6. Assemble: Spoon warm turkey mixture into lettuce leaves. Top with cucumber-apple slaw and a small dollop of lime-mint yogurt. Serve immediately.
