Cucumber-Mint Ginger Sparkler
Description
Cool cucumber, fresh mint, and a hint of ginger are lightly sweetened and brightened with lemon, then topped with sparkling water for a bubbly, ultra-refreshing mocktail.
Ingredients
Instructions
-
In a small pitcher or mixing glass, muddle cucumber slices, mint leaves, and grated ginger gently (about 10–15 presses) to release flavor without pulverizing.
-
Add lemon juice, maple syrup, and the still water. Stir well, then strain into a clean pitcher or directly into two ice-filled glasses to remove solids (or leave some cucumber/mint if you prefer).
-
Top with sparkling water just before serving and stir once or twice. Garnish with a mint sprig and cucumber ribbon. Serve immediately while bubbly.

Note
Potassium management: Keep lemon juice to 2–3 tsp total across two servings to maintain a low potassium load. No-sugar option: Skip sweetener or use a few drops of liquid stevia. Extra zing: Add a splash (1/2–1 tsp) of apple cider vinegar for brightness without adding much potassium or sodium. Make-ahead: Mix the base (everything except sparkling water and ice) up to 24 hours ahead; keep chilled. Add sparkling water just before serving. Label check: Choose plain sparkling water without added minerals/sodium.
