Oatmeal

Fresh Berry Compote:

Optional toppings (choose 1–2, small amounts):

Instructions

  1. Make the compote: In a small saucepan over medium-low heat, combine berries, water, and optional maple syrup. Simmer 4–6 minutes, stirring occasionally, until berries soften and release juices. Stir in lemon juice if using; remove from heat.
  2. Cook the oats: In a separate saucepan, bring water to a gentle boil. Stir in rolled oats, reduce to a simmer, and cook 5–7 minutes, stirring occasionally, until creamy and tender.
  3. Finish the oats: Stir in plant milk, vanilla, and optional cinnamon and maple syrup. Remove from heat.
  4. Serve: Divide oatmeal into two bowls. Spoon warm berry compote over the top. Add optional mint or a small sprinkle of nuts if appropriate for your plan.

Note

Portion mindfulness:

Berries are nutrient-dense; keeping to about 1/2 cup per serving helps manage potassium.

Sweetness: Start with minimal sweetener; the compote is naturally sweet.

Oat choice: Use rolled (old-fashioned) oats. Instant oats can be higher in sodium depending on brand; check labels.

Texture tweaks: For creamier oats, add up to 1/2 cup plant milk and reduce water slightly.

Personalization: Always confirm phosphorus and potassium targets with your renal dietitian. Skip nuts if advised to limit phosphorus.
