While the polenta cooks, heat 1/2 tsp olive oil in a nonstick skillet over medium heat. Add the onion, cabbage, mushrooms, thyme, smoked paprika, and black pepper. Cook for 5–6 minutes, stirring occasionally, until the cabbage softens and the mushrooms are lightly browned.
Cook the egg whites.
3 Push the vegetables to one side of the skillet. Add the remaining 1/2 tsp olive oil, pour in the egg whites, and gently scramble until just set, about 2–3 minutes. Fold the egg whites into the vegetables.
Finish and serve.
4 Stir the optional apple cider vinegar into the veggie mixture. Spoon creamy polenta into a bowl and top with the egg white-cabbage mixture. Garnish with parsley or green onion tops.
