Description

Cool cucumber, fresh mint, and a hint of ginger are lightly sweetened and brightened with lemon, then topped with sparkling water for a bubbly, ultra-refreshing mocktail.

  1. In a small pitcher or mixing glass, muddle cucumber slices, mint leaves, and grated ginger gently (about 10–15 presses) to release flavor without pulverizing.
  2. Add lemon juice, maple syrup, and the still water. Stir well, then strain into a clean pitcher or directly into two ice-filled glasses to remove solids (or leave some cucumber/mint if you prefer).
  3. Top with sparkling water just before serving and stir once or twice. Garnish with a mint sprig and cucumber ribbon. Serve immediately while bubbly.
