Note
Personalization: Always consult your renal dietitian to tailor protein portions to your CKD stage. You can scale turkey up or down per serving as advised. Sodium Savvy: Use unseasoned rice vinegar and plain yogurt. Avoid seasoned rice vinegar (often contains sugar/salt) and packaged sauces. Potassium Management: Butter or Bibb lettuce, cucumber, and apple are lower to moderate in potassium. Keep portions consistent if you’re on a potassium restriction. Flavor Boosts: Add fresh cilantro or a tiny pinch of red pepper flakes. Keep sesame oil to 1 tsp to limit sodium from certain brands and maintain kidney-friendly fats. Make-Ahead: Cook turkey filling and slaw up to 24 hours ahead; assemble just before serving to keep lettuce crisp.
